Apricot & ginger energy bars

Need some inspiration for indulgent and healthy snacks? These tasty snack bars uses hey'Mo Energy & Focus blend to give you extra energy with fresh sweet taste!

For this wonderful recipe you will need:  

8 servings  

🧡 100 g dried apricots + a few for decoration.  

🧡 2 tablespoons of agave syrup  

🧡 50 g coconut oil   

🧡 1 tablespoon of ground ginger  

🧡 1 scoop of hey´Mo Energy&Focus blend  

🧡 100 g oatmeal  

🧡 120 g nut mix  

🧡 40 g dark chocolate  

Pour boiling water over the apricots and let stand for 5 minutes. Strain the apricots and add them to a blender or food processor. Add the syrup, coconut oil, Energy & Focus blend and the coconut oil and ground ginger. Blend until smooth. Add the oat flakes to the mixture and mix gently. Pour the mixture into a separate bowl and chop the nut mixture into large granules. Combine the mixture with the nuts. Line a small baking dish with paper and pour the mixture over the paper. Use a spoon to press the mixture firmly together. Take a few apricots and press them on top of the mixture. Press everything still tightly into the baking dish. Leave in the fridge for at least 2 hours to harden.

Take the mixture out of the fridge and cut into suitable pieces. Melt the chocolate in the microwave or in a water bath, stirring occasionally. Dip the bars in the chocolate and allow to set. Enjoy as a snack whenever you need energy! Can be stored in a glass jar in the fridge for around a week.
